Kara no Kyoukai in legit 1080p coalgirls blu ray rips is probably the best anime series I've seen in terms of music, animations, plot and characterisation.
But there's also a ton of anime out there that I enjoy, too many to list down.
Hellsing - best + best soundtrack
REDLINE - eyegasm, best animation I ever seen (7 years of development 100k hand-drawn frames !) story not so good
Fairy Tail - I dropped around ep. 100 can't remember why
Blood+ - not bad, boring parts
Kore wa Zombie Desuka? - was fun, but pretty weird
Mononoke-hime - I remember watching this as kid, was so scary :3, very good movie

I've heard good things from Fate/Zero, Never seen Beelz~ Black rock is like my all time favorite... Kill la Kill has good shit as well. All I see when people say Little busters is the H game. Still havent seen Slayers it's on my to watch list.

Zero no Tsukaima/Shakugan no Shana - all the same shit. But awesome. Especially I love Zero no Tsukaims. And I really do like characters Kugumiya Rie voices.
Kami Nomi zo Shiru Sekai isn't so ecchi, but it is one of the best harem anime ever made. Manga is beyond awesome too.
Ai Kora harem manga is a masterpiece.
Isekai no Seikishi Monogatari is quite unique way to create a harem anime. This anime is so epic.
Bakemonogatari (all monogatari series) is one of the few nowaday popular anime which is GODDAMN AWESOME.
And every manly man must watch Katanagatari. And ponies. Wait, in the "ecchi" context, ponies are weird. Forget about ponies.
